烤飯糰, grilled rice balls
These are probably one of the easiest yet tasty lunches you could make. All you need is rice, a filling of your choice- leftovers would work, I used 肉鬆 (pork sung, you can get it at your local Asian market),a sheet of sushi seaweed, and soy sauce.
Technically you are supposed to use a charcoal grill but I just pan fried them instead. Take your rice and flatten it out on a piece of plastic wrap. Place your filling in the middle and then use your hands to create a rice ball. Make sure you pack it tight. (you can keep it a ball or make it a triangular shape) On a pan, medium-high heat, place the rice balls on and wait for it to become a little crispy. then flip to the other side. While the second side is cooking, using a pastry brush, spread some soy sauce on the rice ball. then flip, and baste on the other side. Once the rice balls turn brown and crispy you can wrap it with a strip of sushi seaweed and serve!
